We run our farm on solar power and locally-harvested wood — the same resources that have fueled New England sugarhouses for centuries. Dark Robust is our most popular grade — and the one most people picture when they think of pure New England maple syrup. Rich, full-flavored, and deeply amber, it's produced from sap collected at the peak of the sugaring season on our solar-powered farm in Worthington, Massachusetts. The flavor is complex in a way that commercial maple syrup simply isn't: warm caramel up front, a hint of brown butter, and a clean maple finish with real depth.
It's the syrup that turns a stack of pancakes into something worth waking up for — but it earns its place well beyond the breakfast table too. Use it as a glaze on roasted chicken, salmon, or pork tenderloin. Stir it into salad dressings, marinades, and vinaigrettes. Bake it into cookies, muffins, or granola. Drizzle it over yogurt, oatmeal, or cheese. Every container is handcrafted and made with one ingredient: 100% pure maple syrup from our own trees, boiled down in a wood-fired evaporator on renewable energy.

Very Dark Strong is the syrup that serious maple lovers reach for. Produced from sap collected at the very end of the sugaring season — when the days have grown warmer and the maple flavor has concentrated to its deepest, most intense expression — it pours a near-mahogany color and carries a bold, complex flavor that our own customers have described as having a "deep, woody, smoky" quality you simply won't find in lighter grades.
Once called Grade B, the name changed because the old label implied lesser quality. It isn't. It's a different experience — more assertive, more layered, with a richness that holds its own when you cook with it rather than disappearing into the background. If Dark Robust is a Sunday morning syrup, Very Dark Strong is a cook's syrup. It stands up beautifully to the heat of the oven and the char of the grill.
Use it to glaze a pork tenderloin or salmon fillet, deepen the flavor of baked beans, sweeten a barbecue sauce, bake into chocolate brownies or gingerbread, stir into a bourbon cocktail, or simply pour it over pancakes if you want the full maple flavor front and center.
