Maple Mints

Making your own Peppermint Patties is easy! Just a few simple ingredients and you’ll love the results. NO thermometer involved. They taste SO much better than store bought! My husband scarfed these down. I recommend making a double batch! They are gluten free and vegan. Does it get any better than that?
I choose to use unsweetened cacao in this recipe. Read about cacao here which is real raw food.
Ingredients
1 Cup Coconut Oil (room temperature)
4 Tablespoons Maple Syrup
1 Teaspoon Peppermint Extract
1/2 Teaspoon Vanilla Extract (optional)
1/2 -1 Cup 100% Unsweetened Cacao melted in double boiler
Directions
Mix with hand blender or mixer - coconut oil, maple syrup, vanilla, and peppermint extract until smooth
Place mixture in freezer for about 15-20 minutes
Once this mixture is firm enough to handle roll into 10-12 small balls and flatten into a disc. The discs will not be perfectly shaped, which is fine. They will have the homemade look to them.
Place discs back into the freezer for about 15 minutes.
Remove from freezer and dip each disc into melted chocolate. Place on wax paper. Store in the refrigerator.
