Savory Roasted Root Vegetables with Maple!
I love roasted root vegetables for the colder months. Also during the Holidays I enjoy serving our very own vegetables from our garden with the array of colors and flavors.
The maple in this recipe adds interest, edge and dimension to the rich well-rounded intense and decadent vegetables.
Talk about a strong foundation. Maple really delivers here!!
Ingredients- You can easily double this for a crowd.
1 1/2 Cup Sliced Organic Carrot
1 1/2 Cup Sliced Organic Parsnip
1 1/2 Cubed Peeled Organic Turnip
4 Tsp. Olive Oil
1/2 Tsp. Sea Salt
1/4 Tsp. Freshly Ground Pepper
2 Tbsp. Justamere's Maple Syrup
Directions
1. Preheat oven to 450 degrees.
2. Combine first 6 ingredients in a 13X9 inch baking dish coated with olive oil, tossing
well to coat.
3. Bake at 450 degrees for 10 minutes.
4. Stir in syrup.
5. Bake an additional 20 minutes or until tender and golden, stirring after 10 minute.
Options for vegetables- I like to also use shallots, onions and golden or chioggio beets.
