Begin Again
Begin again. "Begin again" are the words of meditation instructors to the student. When you lose yourself in thought, simply begin again. That phase keeps coming up in my mind - begin again. I am amazed that it has been only a month since our last day of boiling and, despite the cold temperatures, I am looking at flowers and green grass. I've been here before - beginning again and enjoying the unfolding of renewal.
Kodi turns 1 year old this month. He is experiencing linear time and exponential growth.
As I was taught in school, I think of time as linear, each day building on the last. Indigenous peoples view time as a circle and believe that all the knowledge needed is within that circle. My linear brain is frustrated that I do not remember the songs of spring migrants and so I look them up or use an app. In circular time, the answer is always there. I realize that if I slow down and wait for the bird to come closer so I can watch and listen the answer was always there. Linear time rushes me from point to point. Circle time is calm and restorative. Wishing you all whatever brings calm and restoration into your life.
Dutch Baby
I read a newspaper article of the 10 recipes you should commit to memory and I read with interest about a Dutch baby. I have never made a Dutch baby but decided to give it a go. It was simple, versatile and pretty darn delicious. Kim informed me that there was a Dutch baby recipe in Marian's cookbook. Who knew? Difference is this recipe uses Justamere maple syrup! Why not give it a try? If it doesn’t come out, you can always begin again!
Dutch Baby
Serves about 6
Total time:25 minutes
Ingredients
3 large eggs
1/2 cup flour
1/2 cup milk (I used oat milk)
1 tablespoon Justamere maple syrup
1/4 teaspoon salt
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter
Fresh berries, Justamere maple cream or syrup for serving
Preheat oven to 400F. Place cast iron skillet in over for 5 minutes to warm. Meanwhile combine eggs, flour, milk, syrup, salt, and vanilla in a blender. Blend until smooth or about 30 seconds. Batter will be thin. Drop butter into skillet and allow to melt in oven for about 2 minutes. Take out the skillet and pour batter into hot pan. Place back in over for 20 minutes or until puffy and golden. Top with berries, maple cream, syrup. It is really good with syrup or maple cream! Enjoy.
